New Year's Eve Dinner

New Year’s Eve is a time reflect on the past year and look forward to the next year of possibilities. People usually celebrate with the company of loves ones, parades, fireworks, champagne and fun foods.

For my family, we usually celebrate by staying in, watching movies, playing games, and making creative appetizers. This year we made Baked Spinach and Artichoke Dip and 2 kinds of Taquitos. Although the main part of the recipe is not mine, I wanted to share my tricks and take on them.



Air Fryer Chicken Taquitos

  • 3 large Chicken breast

  • 8 oz cream Cheese

  • 1/3 cup sour cream

  • Colby Jack Cheese

  • 1 package frozen spinach

  • Small Tortillas

  • Olive Oil spray


  1. Cook chicken as instructed

  2. Once chicken is cooked, add Chicken, cream cheese, sour cream and as much cheese as you would like into food processor. Add salt and pepper as needed.

  3. Warm the tortillas in the microwave for amount 15 seconds

  4. Spread the chicken mixture on the tortilla, sprinkle with cheese and roll

  5. Place rolls into the air fryer and spray with Olive Oil spray

  6. Air Fry Taquitos on 400 for 15 min. Spray with olive oil half way through.

Tips:

  • Putting a little bit of butter on each chicken breast helps keep them moist while they back

  • By using a food processor, it helps shred the chicken and mix all in one step

  • Warming up the tortillas helps make them easier to roll

  • The Olive Oil spray helps the tortilla crisp up in the air fryer

  • Depending on the type of air fryer, you may need to flip half way through.


Spinach Artichoke Dip

  • 16 oz of cream cheese

  • 1/4 cup sour cream

  • 1/4 cup mayonnaise

  • Garlic

  • Parmesan cheese

  • Mozzarella Cheese

  • 1 can artichoke hearts, Drained

  • 2 packages (18 oz) frozen spinach, cooked as instructed and drained


  1. Preheat oven to 350 degrees. Spray a 9x9 pan with cooking spray

  2. In a mixing bowl, stir together cream cheese, sour cream, mayonnaise, garlic, parmesan, and mozzarella

  3. Stir in artichokes and spinach

  4. Spread the mixture evenly into the prepared pan

  5. Bake in preheated oven until heated through and melty, about 20 min

  6. Sprinkle top with mozzarella cheese and bake for another 5-10 minutes until cheese is melted.

Tips:

  • I did not use exact measurements. Jad and I like a good amount of garlic and cheese in ours so I just add till I think it looks right. I think I used maybe 4 cloves of garlic

  • Jad and I don’t mind the flavor of the artichokes, however, the large chunks are not our favorite. I use a food processor to cut them up before adding them

Both were very good and the best part? We ate it for the next few days!
